Strawberry Cheesecake

Yay, a new recipe!! About a month ago, I made my first ever cheesecake and it turned out so yummy! :-D I found this recipe on.... you know it, Pinterest!! I have been making new recipes from Pinterest a lot lately and almost all of them have turned out incredible. In case you want to try it, here is the recipe!

Here is what you will need for the crust:


2 cups finely crushed graham crackers (about 30 squares)
1 Tablespoon sugar
1/2 teaspoon ground cinnamon
1 stick (1/2 cup)  unsalted butter, melted


Here is what you will need for the filling:



2 (8 oz) blocks of cream cheese, softened
3 eggs
1 cup sugar
1 pint sour cream
dash of vanilla extract
1 Tablespoon lemon zest 
(I didn't have zest so I used lemon juice instead)

Here is what you do:

Preheat oven to 325 degrees.

Crush graham crackers



Combine crust ingredients together with a fork until evenly moistened. Spray a 9 inch springform pan with non stick spray. Put crumbs in pan and press into bottom and one inch up along the sides. Put in fridge while making filling


 Beat the cream cheese on low speed for one minute or until smooth. Add the eggs, one at a time, and continue to beat slowly just until combined. DO NOT OVER MIX! Gradually add in the sugar and beat until creamy. About 1 minute. Add sour cream, vanilla and lemon zest. The batter should be well mixed but not over mixed. Pour the filling into the crust and smooth top with spatula.


 Bake for 45-50 minutes. The center will be slightly jiggly. Let cool for 30 minutes, then loosely cover with saran wrap and chill in fridge for at least 4 hours.
Loosen sides of pan with a knife and carefully it.

Mmmmmm :-) 

The only reason mine split was because the saran wrap fell on the top and when I removed it, a big hunk came with it :-(


 Serve with sliced strawberries that have been in a bowl with sugar for several hours in the fridge. It makes a delicious sauce!
(You can serve with whatever fruit you like though)
