Chicken Enchiladas

This is a super yummy recipe that I got from my best friend when I went to Washington last year to visit. It is really really easy too :-) So, here we go!

What you will need!

1 lb cubed chicken
1 8 oz package cream cheese
1 can chopped green chili's (it calls for it, but I didn't buy it)
2 cans Old El Paso Mild Green Chili Enchilada Sauce
1 1/2 - 2 cups shredded cheddar cheese
1 pack 10 in flour tortillas

What you will do!

Step 1 - Cook your chicken until done all the way through.


The recipe doesn't call for it, but Ashley used Mrs. Dash lemon-pepper seasoning while cooking her chicken and it was a delicious touch, so of course I used it! I also threw in some crushed red pepper flakes for heat since I didn't buy the green chili's.


Step 2 - Add your cream cheese to the chicken (if you have the green chili's, now would be the time for those)


Stir it up and let it get all combined

Step 3 - Lay out all your flour tortillas and put an equal amount of the chicken mixture in each

Step 4 - Roll each tortilla and place in a 9x13 in baking dish.


Step 5 - Pour your enchilada sauce over the top and add all of your cheese over that! Mmmmm...
note - I didn't have enough cheese, thus the reason it looks naked, lol

Step 6 -  Bake in a preheated 350 degree oven until cheese is melted and bubbly.


Top with salsa and sour cream if you please and ENJOY!!!!
