Here is what you will need!
1 bag hash browns
8 oz Velveeta Cheese, sliced
1/2 onion, chopped
1 pkg bacon, cut in small pieces and cooked
1 doz scrambled eggs
approx. 4 1/2 tbs butter
1/2 -1 cup shredded cheddar cheese
salt and pepper
Here is what you do!
Step 1 - cut your bacon while it is partially frozen, it makes it easier to layer. Cook to your desired crispness (if that is a word...)
Step 2 - Put hash browns in bottom of a 13x9 pan
Step 3 - add shredded cheddar
Step 4 - throw your onions on (I don't cook them at all before, I personally like the little crunch they give)
Step 5 - Add your cooked bacon, YUM
Step 6 - I like to add butter to give it some moisture.... more is fine too, if you like
Step 7 - FAVORITE step! Layer on your velveeta! I personally am going to add more next time... it is super yummy stuff :-)
Step 8 - Scramble up a dozen eggs with some salt and pepper.... Cook them almost all the way, leaving them a little wet (I just thought of something too.... I wonder if you just put them on raw like in a quiche, if they would do better... hmmm, I'll try that next time.) Do what you prefer...
Step 9 - Put your eggs on top, and add some more salt and pepper
Step 10 - Bake in a preheated 400 degree oven for about 20 min.
