Oregano - Lemon Chicken

Wow, it had been a while since I posted a recipe, sorry! I really haven't been trying any new recipes lately and the few I have tried weren't worth sharing... Sooo, here we go! This isn't my favorite chicken recipe in the world, but it's okay..

What you will need!



6 chicken breasts (I only had 4)
3 tbsp lemon juice
2 tbsp honey
1 tbs olive oil
3 garlic cloves, minced
2 tsp dried oregano

Here is what you do!

Preheat oven to 375.


Place your chicken in a 9x13 for 6 breasts or a 8x8 for 4

Combine in a bowl:

lemon juice


honey (it looks very strange!)


olive oil (very cool)


garlic


I like to use this hand grater for my garlic. It's easier than mincing it, and it makes it smaller so you don't bite into chunks of garlic :-) (A cool tip I learned from Rachel Ray)

and the oregano.

note: I usually double or even triple the liquid portion of the recipe because I like extra juice.


Pour over the chicken and bake uncovered for 30-45 min. I usually turn it over halfway...


I also made some seasoned potatoes and peas to go with it, very tasty I must say :-)


Of course, I eat my potatoes with ...... KETCHUP! Mmmmm
