Cheesy Ranch Chicken Pasta

And yet another recipe from Pinterest that has turned out amazing!!  This is a recipe from the Life as a Lofthouse blog, and it was yummy. Jimmy and I actually ended up making this together (♥), so we tweaked it a little :-) Want the recipe? Here ya go!!

Here is what you need!

8 oz dried pasta (I used Penna)
1 Tablespoon butter (we ended up using 3)
2 boneless skinless chicken breast cut into pieces (we used 3 and shredded them)
2 Tablespoons flour
1 packet dry ranch dressing seasoning mix
2 cups milk (we added another 1/4 cup at the end)
1 cup shredded cheddar cheese
1/3 cup bacon (we used the whole pound, lol)
we added 1 head steamed broccoli

Here is what you do!

Bring a large pot of water to a boil. Add dried pasta and cook according to package directions, drain.

cook bacon, drain and crumble into bite size pieces. Set aside.

Heat 1 Tbsp butter over medium-high heat in a large skillet. Add the chicken pieces and cook until no longer pink. (If you shred like us, cook whole breasts and then shred.) While you are cooking the chicken, steam the broccoli. Set aside.

Once chicken is done, sprinkle the flour and packet of ranch dressing over the chicken. Stir. Pour in milk and continue to stir and cook until mixture starts to thicken. Stir in cheese and bacon. Stir until cheese melts.

Add the broccoli and the pasta and stir to combine. Here is where we added another 1/4 cup of milk because it seemed a little dry.

Hope you make it!
ENJOY!!!!
