Zucchini bread

I love zucchini bread!!! I actually pretty much love bread in general.... not a good thing, I know. I have been slowly cooking/baking things specifically to stock my freezer. This week it just happened to be zucchini bread and I figured I would throw it up on the blog for you! (That just sounded totally gross)

Here is what you need!


3 cups all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger (I used nutmeg)
3 eggs
1 cup vegetable oil (I like to use applesauce in cakes and breads)
1 cup sugar
1 cup packed brown sugar
2 tsp vanilla
2-3 cups grated zucchini (3 average size zucchini's)
1 cup chopped walnuts or pecans

Here is what you do!

Preheat oven to 325

In a large bowl, combine flour, salt, baking soda, baking powder, cinnamon and ginger. Set aside

Mix together oil (applesauce) and sugar

add brown sugar, mix

add the eggs and vanilla, mix

add 1/2 the flour mixture and mix

add other half until just combined

Grate your zucchini 

add the zucchini and chopped nuts to the mix and combine by hand

Pour into 2 well greased loaf pans and bake for 45 min to 1 hour or until toothpick comes out clean!

I don't really think I make that big of a mess when I bake! :-)

Mmmmm, let cool on rack

I made 4 loaves. I sliced them all up, froze 3 and left 1 for us to eat right away. (It only lasted 2 days!)

Hope you will try this recipe if you have never had zucchini bread before. I know it sounds super disgusting, but trust me, it is amazing!!
